  • Salmon: try to buy salmon fillets that are similar in size so they cook evenly. 
  • Olive oil: you can also use another oil of your choice such as avocado oil. 
  • Seasoning: I season the Greek salmon with dried oregano, dried basil, garlic powder, onion powder, salt, and pepper.
  • Greek salsa: to make the salsa, you’ll need grape tomatoes, cucumber, red onion, kalamata olives, feta cheese, lemon juice, and dill leaves.

Salmon: Substitute with trout, cod, or halibut for a different fish option.

Olive Oil: Swap with avocado oil or grapeseed oil for a different flavor profile.

How To Make Greek Salmon 

Step 1: Prepare the salmon: Brush a tablespoon of olive oil over the salmon fillets on both sides.

Step 2: Make the seasoning: In a small bowl mix the seasonings; oregano, basil, garlic powder, onion powder, salt, and pepper. Rub the seasonings over the salmon evenly.

Step 3: Sear the salmon: Heat a large skillet with the remaining tablespoon of olive oil. Add the salmon and fry until crispy and golden for 4-5 minutes and flip it to the other side gently and cook further for 2-3 minutes.

Step 4: Make the salsa: Meanwhile, prepare the salsa. In a wide bowl combine tomatoes, cucumber, red onion, kalamata olives, feta cheese, olive oil, lemon juice, dill, salt & pepper. Gently toss together.

Step 5: Serve: Serve the salmon with a spoonful of salsa on top.

  • Freezing: To store for longer, you can freeze the cooked salmon. Wrap it tightly in plastic wrap, then place it in a freezer-safe bag or container. Frozen salmon will maintain its quality for up to 2 months. When you’re ready to enjoy it again, thaw the salmon in the refrigerator overnight.

Reheating Greek Salmon:

  • Oven: Preheat your oven to 275°F (135°C). Place the salmon on a baking sheet and cover it loosely with aluminum foil to retain moisture. Heat for 10-15 minutes, or until warmed through.
  • Microwave: Place the salmon on a microwave-safe plate and cover it with a microwave-safe lid or another plate to prevent drying out. Reheat on medium power in 30-second intervals until warmed through. Be cautious, as microwaving can sometimes make the salmon dry out.

Ideally, wild salmon is my go-to choice for flavor and sustainability. You can also buy frozen center cut Atlantic salmon if you do not have access to a fresh fish counter. Frozen fish is actually quite fresh as they’re frozen immediately after being caught!

What is the best way to thaw frozen salmon?

The easiest and safest way to thaw a salmon would be overnight in your fridge. But you can also thaw frozen salmon in a sealed bag in a bowl of cold water for 45 minutes to an hour.

How do you know if salmon is cooked?

Use a meat thermometer to check the thickest part of the salmon. The internal temperature should be 145 degrees F. Or simply use a fork and see if it easily flakes easily.

Can I prepare this dish ahead of time?

Yes, you can marinate the salmon up to a few hours in advance, but it’s best cooked and served fresh.

  • 4 8 oz. salmon fillets, skinless or skin on
  • 2 tablespoons olive oil, divided
